I'm a qualified nutritional advisor, and if you stripped my job back to a single sentence, it would be this: eat more plants, and eat a wider range of them. It's the least fashionable advice in nutrition, and the one that's never been overturned.

The catch is that greens are the hardest thing to actually do. Most of us rotate the same two or three vegetables, if we manage them at all. Cold-pressing was my way around that β€” several different plants in one glass, pressed from whole veg and never from concentrate. Single-ingredient celery for the purists, proper green blends for everyone who's always found them a hard sell.

I won't dress it up as a cure or a magic fix. It isn't one, and you deserve better than that from someone who trained in this. A juice is simply an easy way to eat a few more plants, and a wider variety of them, on the days life gets in the way. That's the whole idea β€” and after years of watching people struggle with the "eat your greens" part, I think it's a good one.

My job is simpler than making promises: make the vegetables easy, honest, and genuinely good enough that you'll keep reaching for them. The rest looks after itself.
