Here's what it actually is, why people drink it, and how to make friends with the taste, with the miracle claims strained out.

What it is

A whole lot of celery, and not much else

Celery (Apium graveolens) is mostly water, which is why it takes a surprising amount of it to fill a bottle. Cold-pressing squeezes the juice out of a big pile of stalks under pressure, so what you drink is concentrated celery and little else. The taste is fresh, green and savoury, faintly salty and peppery, closer to a cold soup than to fruit juice. People tend to love it or pull a face, and both are fair.

The appeal of celery juice is that there's nowhere to hide: it's one vegetable, so the quality of the pressing is the whole product. We press whole fresh stalks in small batches, cold, and freeze them straight away. No water to bulk it out, no concentrate, no sugar, no preservatives.

Freezing fresh is how we skip pasteurising. It reaches you frozen and waits in the freezer until you want it, then defrosts to taste like it did coming off the press. That's the entire method, and with one ingredient there's not much else to say, which is rather the point.

One vegetable, cold-pressed, frozen fresh. If a celery juice has been watered down, made from concentrate or left to sit on a shelf, you'll taste the difference in the first mouthful.

No. We flash-freeze straight off the press instead of heat-treating or high-pressure processing, so nothing's done to the juice between the press and your freezer.
